And I KNOW it’s the ultimate because it’s gets eaten fast.
My family is an apple dessert kind of bunch. I’ve been making apple pies, apple turnovers and apple crisps for years. HOWEVER, about six years ago, my girl child went vegan and son soon added onto the dietary restrictions list by going no dairy.
I said… no problem.
My first, second and 34756734 attempts were not good. But I’m not a quitter.
The recipe I’m going to share can be made with regular butter, but I use Earth’s Balance and it’s just as delicious!
Ready or not… here’s the spell to create a delicious Thanksgiving apple potion.
Ingredients
—8 apples: peeled and chopped into cubes. I like to use Granny Smith, but I change it up all the time. Use what you love best.
—2 Tbsp sugar
—3/4 ground cinnamon ( I use a whole teaspoon. I’m liberal with the cinnamon. LOL)
1 1/2 tsp lemon juice
*Topping ingredients (I double this next part because we like lots of topping and I use the extra to make a giant cookie. For real.)
—1 cup light brown sugar
—3/4 cup old fashioned oats (Don’t use quick oats. I tried that once and it was weird.)
—3/4 cup all purpose flour
—1 tsp ground cinnamon
—1/2 cup cold unsalted butter diced into little cubes. (THIS is where I substitute the Earth’s Balance butter so it’s vegan. To me it tastes exactly the same.)
— a cup of chopped pecans (I use way more than a cup. Probably a cup and a half.)
Let’s DO IT!
—Preheat oven to 350 F degrees. Butter an 8×8 baking dish, or spray with non-stick cooking spray. Set aside.
Getting the apples ready!!
—In a mixing bowl, add chopped and peeled apples, granulated sugar, 3/4 tsp of the cinnamon and lemon juice. Stir to combine, then transfer to prepared baking dish.
Make that delicious topping! Yes!
—In a separate mixing bowl, add topping ingredients (brown sugar, oats, flour, 1 tsp cinnamon, salt, and diced cold butter)
— Use your hands to mix the butter into the oat mixture( it’s a great workout LOL), using a slight downward twisting motion, until mixture resembled pea-sized crumbs. Add the pecans after you already mixed it up then mix them in.
Bake that crisp!!
Spread topping over apples in baking dish, and gently pat to even it out. Bake 40-50 minutes, until golden brown and bubbly. In my oven it takes an hour. Just check it and it will be bubbling when it’s ready.
AND with the left over topping, put it on a greased cookie sheet, smoosh it flat and bake it at 350 F degrees for about ten minutes. I go longer because we like burned cookies. LOL It turns into a ginormous crunchy cookie. We like to break it up and put it on ice cream or just eat it.
So there you go. It’s a great potion to make a whole bunch of witches happy at Thanksgiving!!
